O que é necessário compreender em relação às indústrias de alimentos. Com as recentes ordens de quarentena, pelo rápido início de doenças em todo o mundo e a natureza altamente contagiosa do novo coronavírus (COVID-19), todas as empresas devem se preparar e refletir sobre o que pode acontecer e tomar ações para minimizar os possíveis impactos na organização e no abastecimento de alimentos da população em geral.
Para começar, preciso esclarecer que a gripe por COVID-19 não é uma DTA (doença transmitida pelo alimento) a transmissão acontece de maneira direta, de pessoa a pessoa ou por contato das mãos com superfícies contaminadas e posterior contato com as mucosas da boca, nariz ou olho. Então esse vírus não deve ser considerado um perigo para a segurança do alimento.
Embora a segurança dos produtos não está sendo ameaçada, precisamos dar orientações para que as indústrias de alimentos possam continuar trabalhando, pois de fato, ante essa emergência mundial que estamos vivendo toda a população precisa, e muito, de disponibilidade de alimentos para não aumentar ainda mais o caos. Hoje, as empresas envolvidas na cadeia de fornecimento de alimentos têm um papel fundamental para minimizar os prejuízos que, inevitavelmente, sofrerá a população. Nesse momento histórico onde todas as empresas, fabricas e muitos outros serviços estão parando suas atividades impedir o desabastecimento de alimentos é a obrigação principal dos fabricantes de alimentos com a comunidade.
A maioria das orientações dadas para prevenir a transmissão do coronavírus são aquelas já exigidas pelas boas práticas de fabricação (BPF), ou seja, lavagem das mãos frequentemente, sanitização delas com, por exemplo, álcool 70%, álcool gel 70% ou utilizando sabonete antisséptico. As práticas, como comunicar a suspeita de doenças transmissíveis quando os primeiros sintomas surgirem, também são exigências relacionadas às BPFs. Nesse ponto, os primeiros sintomas relacionados com o COVID-19 não podem ser omitidos.
A prevenção no ambiente das indústrias de alimentos:
Nas fábricas e locais de manipulação de alimentos, devem ser seguidas as orientações amplamente difundidas pelos organismos oficiais para evitar a transmissão do vírus pelo ambiente. Mantendo adequada higiene das áreas e superfícies habitualmente manuseadas pelos funcionários, limpando regularmente mesas, maçanetas, telefones, teclados e outros objetos de uso comum.
Evitar ao máximo as reuniões presenciais. Hoje contamos com muitos dispositivos que permitem reuniões virtuais (Skype, WhatsApp, Whereby, Hangouts). Em caso de ser imprescindível a reunião presencial, reduza o número de participante e o tempo da mesma ao essencial. Durante a reunião disponibilize sanitizante para as mãos, lenços, lixeira fechada para descartar os lenços e máscaras, em caso que algum participante esteja mostrando sintomas gripais.
O cuidando das pessoas
O comprometimento das indústrias de alimentos tem que encontrar o ponto de equilíbrio, entre continuar produzindo para abastecer à população, mas sem pôr em risco os próprios colaboradores. Seguem alguns pontos a serem considerados:
O aumento do absenteísmo será um dos efeitos mais previsíveis, pois alguns colaboradores ficarão doentes e outros precisarão de cuidar de familiares em risco ou crianças, se as escolas fecharem. Pelo que é preciso identificar as funções chaves dentro da operação para manter a produção rodando e treinar um grupo de colaboradores substitutos para cobrir essas funções, em caso de necessidade. Incentive o comparecimento no local trabalho brindando benefícios como por exemplo venda de produtos da empresa com preço reduzido. Segundo as estadísticas, se a pandemia se prolongar por muito tempo é provável que a fábrica conte com apenas 50% dos funcionários da operação. Pense em isso para estar preparado.
O desconhecimento sobre as consequências que podem trazer uma pandemia poderá gerar confusão e desespero nos colaboradores, e prejuízos desnecessários na operação. É importante manter vias de comunicação abertas e formais com os funcionários, para informar sobre as decisões da empresa e esclarecer dúvidas em geral. Disponibiliza um grupo de WhatsApp, ou um local na rede interna par formalizar essas comunicações.
Sabendo que o vírus se propaga, principalmente, por contato direto entre as pessoas, é recomendado reduzir a quantidade de colaboradores que permanecem no mesmo local simultaneamente tanto como possível. Para isso pode ser necessário alterar o horário das refeições para que grupos menores permaneçam no refeitório ou disponibilizar mais espaços ou salas para o horário de descanso. No caso de os colaboradores com atividades administrativas, uma alternativa é disponibilizar recursos para que trabalhem desde suas casas (home office).
Todas as medidas preventivas e processos de triagem a serem tomados tem que ser coordenadas com o RH da empresa e validadas com o advogado da organização para garantir que não descumpram as legislações laborais, incluindo o afastamento preventivo dos trabalhadores com mais de 60 anos e a triagem dos funcionários em relação à aparição de sintomas relacionados com o COVID-19. A triagem mais utilizada é o monitoramento da temperatura corporal antes de começar a jornada laboral. Colaboradores com febre acima de 37.3°C deverão ser afastados do local de trabalho, e receber acompanhamento médico.
Garantindo o fornecimento
Durante o período de quarentena, os consumidores acostumam mudar seus hábitos de consumo, pois preparam mais refeições em casa e para todo o grupo familiar, também preferem comprar alimentos não perecíveis a alimentos frescos. Em vista disso, a organização deve priorizar a produção de alimentos de consumo doméstico que atendam essa mudança, tanto no tipo de produto como também na quantidade de alimento por unidade de venda.
A cadeia de fornecimento também passará por mudanças e pode que para manter a produção de alimentos essenciais para a população requeira de substituições emergenciais de insumos, desenvolva um plano de contingência contemplando o fornecimento de insumos substitutos e/ou fornecedores alternativos para garantir a quantidade e qualidade constante dos produtos.
Além das ações focadas na produção, devem ser tomadas ações para manter a logística e a distribuição dos produtos, para isso o cuidado do motorista será chave. Defina procedimentos de recebimentos e expedição que minimizem o contato entre motoristas e os funcionários do armazém. Por exemplo, o motorista poderia ficar dentro do caminhão enquanto os materiais são carregados ou descarregados.
